Ingredients
  

  • 1 lb boneless skinless chicken breast
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 2 cans white beans drained and rinsed
  • 3 cups chicken broth low sodium
  • 1 cup heavy cream
  • 4 oz cream cheese softened
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon ground cumin
  • ½ teaspoon dried oregano
  • Optional: chopped cilantro for garnish

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until soft.
  3. Stir in garlic and cook for 30 seconds.
  4. Add chicken breast and cook until lightly browned.
  5. Pour in chicken broth and add white beans.
  6. Bring to a gentle simmer.
  7. Add cream cheese and stir until melted.
  8. Pour in heavy cream and season with salt, pepper, cumin, and oregano.
  9. Simmer for 15–20 minutes until chicken is fully cooked.
  10. Remove chicken, shred it, then return it to the pot.
  11. Stir well and serve warm.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • Reheat on low heat to maintain creaminess.
