Method
- Heat olive oil in a large pot over medium heat.
- Add diced onion and cook until soft.
- Stir in garlic and cook for 30 seconds.
- Add chicken breast and cook until lightly browned.
- Pour in chicken broth and add white beans.
- Bring to a gentle simmer.
- Add cream cheese and stir until melted.
- Pour in heavy cream and season with salt, pepper, cumin, and oregano.
- Simmer for 15–20 minutes until chicken is fully cooked.
- Remove chicken, shred it, then return it to the pot.
- Stir well and serve warm.
