Ingredients
  

  • lb fresh green beans trimmed
  • 2 tablespoons olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 8 oz mushrooms sliced
  • 1 cup heavy cream
  • ½ cup milk
  • ½ cup shredded cheddar or parmesan cheese
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • 1 cup crispy fried onions or breadcrumb topping

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Blanch green beans in boiling water for 3–4 minutes, then drain.
  3. Heat olive oil in a pan and sauté onion and garlic until soft.
  4. Add mushrooms and cook until lightly browned.
  5. Stir in cream, milk, salt, pepper, and thyme. Simmer briefly.
  6. Combine green beans with creamy mixture.
  7. Transfer to a baking dish and top with cheese and crispy onions.
  8. Bake uncovered for 25–30 minutes until bubbly and golden.
  9. Let rest slightly before serving.
